Get Pickled! Quick refrigerator pickles for the cucumber bounty

If you have an abundance of summer produce, but the thought of traditional canning sounds daunting, this recipe is the answer. Quick pickles are an easy and flavorful use of a variety of seasonal vegetables, but they work especially well with items that are in full swing right now: cucumbers, squash and zucchini. Throw in sliced onion and peeled garlic cloves for extra flavor and hot peppers for added punch.

The method couldn’t be easier. You’re simply creating a straightforward brine with vinegar, water, sugar and salt on the stovetop, turning off the heat and adding thinly sliced vegetables. Transfer everything into an airtight container in the fridge for a couple of hours and you’ve got an incredible bread-and-butter pickle that will enhance a range of dishes.

Light and right for spring: Penne Primavera with Fresh Gulf Shrimp

This week’s recipe is one of those no-rules ones that’s adaptable at will. Pasta with fresh Gulf shrimp and lightly sautéed seasonal vegetables is something I absolutely love to have around the house this time of year. It’s cozy, healthy and packed with flavor. Change out the vegetables as the season evolves. Clip some herbs from the backyard to make it sing. Serve it with a simple salad and a crusty loaf of bread for an easy dinner. The only labor-intensive part is peeling the shrimp, but it’s well worth it.

Clean-up is easy; I use one large sauté pan to cook all the ingredients except for the pasta.

3 yummy choices for salad-a-day resolutions

My friend Elena once set a clear and simple personal goal: eat a salad everyday. The resolution was straightforward and easy to measure, exactly as a doable goal should be. Elena’s idea was that by committing to a daily dose of green, she was assured of a healthy injection — no matter what the rest of the day brought.

I love salads – and I love this idea. It checks so many boxes. Salads are affordable and generally good for you. You can change them up daily, creating something substantial and rich in protein, or something light and refreshing. They’re seasonal, portable and naturally stress-reducing. Fresh Kumquat Cake a Great Use of Winter Fruit

Love ‘em or hate ‘em, kumquats are in big supply in southern Louisiana and other parts of the country right now, overloading backyard branches and appearing in the produce aisle in pint-sized containers. According to the LSU AgCenter, we grow two kinds of kumquats in Louisiana, the oblong Nagami and the rounder, sweeter Meiwa.

I have a couple of Meiwa kumquat trees in my herb garden, and every year, I struggle to use the crazy abundance of fruit that won’t stop coming. They’re like sharks teeth. Pick one, and it seems like a dozen more are right behind it in varying stages of ripeness, ready to take its place.

This simple kumquat cake is moist and flavorful and is a great way to use 2 cups of fresh fruit.

My secret date with cornbread dressing

Ahh, the holiday rotation. Years ago, my hubby and I put a system in place that divvied up the holidays as fairly as possible among the grandparents, none of whom live here in Baton Rouge. I won’t bore you with the drama (you can probably relate), I’ll just share the result. For the last 15 years, the system has pretty much had us traveling to someone else’s house for Thanksgiving, while we host Christmas. I love planning and hosting the Christmas meal, but I have to admit, I miss the opportunity to cook — really cook — traditional Thanksgiving dinner. Sure, we bring stuff. But it’s minor. The main meal, and especially the dressing, is claimed by our family’s various Thanksgiving hosts. And you gotta respect territoriality, especially where cornbread dressing is involved.

LSU-Bama: Embrace your inner corn dog

Somehow, we earned the corn dog nickname. There are so many other things we creatively devious LSU fans could have been called, so many other foods we’re obsessed with and probably smell like…but corn dogs…hmm. Always been a head scratcher. Alrighty. Let’s just go with it. Here’s to embracing your trashy, Bama-hatin’, carnival lovin’ corn dog self this weekend over fine specimens made in the comfort of your own home. It is an away game, after all, robbing LSU fans of the opportunity to cook up elephant-themed delicacies outside Tiger Stadium, which have actually been known to stump aghast internet columnists.
